15. Thai Eggplants Sushi

Ingredients:
• 2 eggplants
• 4 oz. of rice
• 4 tbsp. of olive oil
• 1 cucumber
• 4 oz. of cheese
• 1 garlic clove
• 2 tbsp. of ketchup
Instructions:
1. Prepare rice in salty water.
2. Wash and cut eggplants into lines. Soak them in cold water and let them sit there for 15 minutes.
3. Sauté eggplant slices in hot oil, so that they become elastic.
4. Combine cheese, salt, ground cucumber, and cut garlic. Spread the mixture over eggplant slices.
5. Add rice on the slices and then roll them.
6. Serve and enjoy!
